Cut down on your tears while cutting onions!
Why do we cry when we cut onions? When the onions enzymes break down they create sulphenic acids. These acids mix with the air and eventually cause your eyes to tear. A helpful way to cut down on your tears is to cut down on the amount of sulphenic acid that is produced. All you have to do in order to reduce the acid produced is keep your onions cold in a refrigerator or root cellar. This inhibits that enzymes so they can't produce as much acid. Your eyes will thank you!
